Leek and shallot “risotto” with Ashley deck and vane

I told you about Arboriogate 2014– thought I had arborio rice, turns out it was basmati. I used it anyway and it actually worked out. You use the same proportions of stock with the basmati but I would just give it a taste test when you’re nearing the end of the stock reserve. I’ve really been craving leeks lately and this “risotto” was a very yummy way to have a subtle leek taste. I think next time I would simmer the broth with the green parts of the leeks to infuse a little more leeks into this recipe. Also I obviously didn’t use cheese.
